Why it's important to set the language setting to English (North America)?
From the support perspective it is recommended to install InDesign server application with language setting "English (North America)" to get activated color management within the InDesign Servers.
How to change the installation language of InDesign Servers?

Latest version of creative cloud application
UI of latest version creative cloud app has been changed. Please refer to below image for the language setting.
In InDesign server cc2018.1 you will get the option to choose the language at the time of installation. So choose the language 'English (North America)' from the dropdown and proceed with the installation.
CC 2018.1 InDesign Server
To apply the language change to an InDesign Server application that you have already installed on your computer, change the language preference using creative cloud app as shown in the below video & reinstall the InDesign Server application.
CS6 to CC2018.0 InDesign Servers
In this versions adobe suppressed the option to choose language setting at the time installation. So the indesign CC servers will utilize the language setting from your operating system.
However you can find and change the language setting of installed indesign server applications by using adobe creative cloud application. Refer below screencast.

If you dont have adobe creative cloud app installed in your machine, please download and install from the following link https://www.adobe.com/in/creativecloud/desktop-app.html. You need an Adobe ID & password to log in creative cloud application.
